Russ & Sonia began their journey in 1994 in the San Francisco Bay Area, opening their first sausage plant with a simple goal: creating sausages that are natural, flavorful, and free of fillers. Initially focused on traditional German-style pork sausages, they quickly recognized the demand for healthier, more nutritionally friendly options that didn’t compromise on taste or quality.

They got creative, experimenting with poultry, vegetables, fruits, spices, and even wines to craft sausages that weren’t just innovative but genuinely delicious. By fine-tuning recipes with feedback from friends, neighbors, and their own children, they discovered that starting with fresh, high-quality ingredients and letting the flavors shine led to something truly remarkable.

As young parents, they understood the need for convenient, fully cooked sausages and worked to keep their products affordable without sacrificing quality. In 1998, they relocated to Lodi, Central California, where they expanded their poultry line and committed to going all-natural. Even their pork sausages, now leaner than ever, are made with the same care, smoked over hardwood chips, and free from unnecessary additives. With reduced nitrites and an ongoing dedication to cleaner ingredients, they continue refining their craft.
